I’m a big foodie, in the sense that I like food. I also like taking pictures of food.

I did the Whole30 diet awhile back. I got really into it and did the entire thirty days it requests. Since then, I’ve casually adhered to a 80/20 rule: 80% Whole30, 20% not Whole30.

I’ve unsuccessfully pimped the diet out to other people, and since I’m super annoying about most things, I decided to be super annoying about this. I’m going to start posting my minimalist, Whole30(ish) complaint recipes!

WOOOOOT. HASHTAG LIFE THINGS!

My first is one of my favorite things, a simplistic breakfast bowl that’s super filling.

INGREDIENTS

  • 2 Poached Eggs
  • 1 Cup Cooked Spinach
  • 2 Small White Potatoes
  • Drizzle of Olive Oil
  • 1 Teaspoon Cayenne Pepper
  • Pinch of Salt/Pepper

This breakfast is super quick. I like to cook everything in parallel, boiling the poached eggs, boiling or microwaving the spinach and frying the potatoes. You can also microwave potatoes, FYI.

There are some variations you can make to this… which is the best part. I love Cayenne Pepper and I put it on a lot. You don’t have to – feel free to sub out another spice or double down on regular pepper. Also, this can be made with either fresh or frozen spinach. For me, it depends on time.

Whole30 also allows certain kinds of bacon. The key is to get meat that doesn’t have sugar and is raised responsibly.

(You know, pigs that went to college and stayed off the reefer.)

You can also add red or green tomatoes, olives, or other kinds of approved meat. The key is to find what blend of spices and vegetables appeal to your taste. Also, something that’s always helped me with Whole30 is keeping things simple.
